I personally would expect SIP to become the most popular mostly because of the number of vendors that make SIP equipment. The only real difference between any of the technologies is the way they handle quality of service and the connection for the conversation. There are some proprietary methods of transport as well. No matter what technology you implement, if your devices do not understand the QoS methods it will be a waste. SIP was developed to address some shortcomings and interoperability problems with older technologies. As for P2P, it is a peer to peer technology also used for sharing files. It works well and is fairly robust. But the majority of vendors are working with SIP.
