Are there any tricks or expected pitfalls of running radio voice traffic as VoIP through a satellite connection? Will a standard satellite connection work or do we need to go to VSAT, for example?

This decision really comes back to what is considered tolerable by those using the system for VoIP communication. Any time that VoIP is transported over a satellite connection there is going to be a relatively high latency introduced that can be in the hundreds of milliseconds (low or higher hundreds depending on the service). Most people can tolerate something in the 100 to 200ms range and hardly notice it. Once that latency grows to about 500ms, people can definitely begin to notice it. You're very likely to get better and more predictable service from a VSAT provider. If this service is going to be used for a business with multiple locations, then VSAT is likely the best choice.
