Are there any books that you would recommend to someone that has an interest in learning VoIP? Specifically for the protocol breakdown and the concept of its functionality.

There have been a lot of books written on VoIP over the past decade. Not surprisingly, there are also many different protocols that support VoIP. Some of these protocols are proprietary and others are based on open standards, which promote interoperability. The most popular protocol today for VoIP, and indeed, many other applications over IP is the Session Initiation Protocol (SIP). SIP was developed by the Internet Engineering Task Force (IETF) and it has been adopted by most major communications equipment manufacturers worldwide. SIP has also been adopted in the mobile community (3GPP). A couple good books on SIP are:
