What is the difference between VoIP and IP telephony?

IP telephony includes services that were traditionally analog or another platform like fax or text messaging, and

upon building on these services, we can encompass things like universal messaging. Messaging services, such as IM, are generally open chat lines through IP service ports. VoIP can be routed through regular HTTP ports (SIP) or through H.323.
